Simple and simply delicious.


•eggplant   •yellow zucchini   •tomato   •gralic   •chili flakes   •fresh basil   •fresh parsley   •olive oil   •parmesan   •bryndza (soft sheep milk cheese)   •buns
Slice the eggplant.
Sprinkle with salt and set aside for 15 minutes.
Slice the zucchini.
Place the vegetables on a baking sheet.
Drizzle with olive oil.
Season with salt and pepper.
Slice the tomato.
Drizzle with olive oil. Sprinkle with finely diced garlic, chopped basil and chili flakes.
Roast everything for about 30 minutes.
Spread some cheese on the buns.
Place roasted eggplant on the bun.
Top with zucchini.
Top with tomato.
Top with parsley leaves.
Prepare some parmesan flakes and place them on the sandwich.
