beet greens crostini
Green is the new pink.
Wash the greens thoroughly. Chop beets, leaves and stems.
Bring water to boil. Add the greens and cook until they soften (about 4-8 minutes).
Strain the beet greens and transfer to a food processor.
Combine with cheese.
Add some chopped dill. Season with black pepper.
Slice the baguette.
Toast baguette slices in the oven.
Top each slice with some spread.
Put a slice of radish on top.
Finish off with dill.
